Wash and drain the stinging nettle leaves (you can poach them quickly if you wish)
Put all the ingredients in a blender and blend until smooth
Heat a drizzle of butter in a large, non-stick pan over a medium heat and spoon in a ladleful of batter.
Cook for 1-2 mins or until bubbles appear, then flip over for 1 min more or until cooked. Repeat until you have about 20 pancakes.
