Toddler Approved Stinging Nettle Pancakes

  • 2,5 cups free stinging nettle leaves can be substituted with spinach
  • 2 eggs
  • 2 cups milk
  • 1,5 cup flour
  • 1 tsp salt
  • 1 tbsp olive oil
  • butter


  1. Wash and drain the stinging nettle leaves (you can poach them quickly if you wish)

  2. Put all the ingredients in a blender and blend until smooth

  3. Heat a drizzle of butter in a large, non-stick pan over a medium heat and spoon in a ladleful of batter. 

  4. Cook for 1-2 mins or until bubbles appear, then flip over for 1 min more or until cooked. Repeat until you have about 20 pancakes.
